Edamame Salad Recipe-Yum

Options
Made a wonderful salad:
Cooked edamame (soybeans - not in the pods) - 2 (10 oz) pkgs
1 cup dried cranberries
4 oz light feta cheese, crumbled
2 tbsp fresh chopped basil
2 tbsp white wine vinegar
ground fresh black pepper

Mix together. Refrigerate.

Makes 10 servings: 142 calories

    I loved it! The cranberries were such a nice sweet compliment to the savory.
