Makes 9 Humungous muffins
1 box Betty Crocker super moist carrot cake mix
1 14oz can of pure pumkin
1 scoop protein powder( I used Biox which has 29 g of protein per scoop)
1 tsp cinnamon
Bake @ 350 for 24 minutes
Crispy top and supermoist underneath
Cals 208, Carbs 43, Fat 2, Protein 6, Fibre 2, Sodium 352

I'm sure its nice, but using any cake mix is a cop out. What happened to proper baking. You know exactly what is in it. None of that awful Palm Oil. And who needs protein powder if you are eating healthy? Call me old fashioned, (I am after all a senior) but there is pleasure in baking from scratch, and no junk being consumed. Did you count the sugar content?0

I don't track my sugars. I can see by the carbs that they have sugar in them. Hell Yes, Im going to use a box mix if I don't have the time especially with a carrot cake. Shredded my knuckles on the grater one too many times.0

Hi Melissa, You might want to add a bit of water if you find the mix a bit on the thick side.
BTW your name startled me a bit, I went to public school with a Melissa Graham!
