Questions and problems of a newbie

Hi,
I've only recently developed a severe intolerance and/or allergy to wheat/gluten. Still waiting for doctors result in a bit more than a week.

So, I have all different symptoms: bloating, foggyness, head aches up to migraines, depression, insomnia, itching skin, terrible constipation and water retention etc. The last weeks I have been careful what to eat and after a few days I was great: a clear head again. But the kind of lingering head ache did not want to go completely. I got glutened or contaminated twice: once I was not careful and I put a home-made oatmeal cookie morsel into my mouth and only realized after swallowing.
But today it got me really bad at breakfast-brunch. The only item I ate with any potential was the taco sauce with modified starch in it. The other items were eggs, spinach and some chickpeas.
I researched "modified starch" but everywhere it says that it is gluten free. Why am I so sick again? Do you have any experience?

I find it really hard to give up all the food I love. Living in Switzerland makes it tough for you get all lovely baked items. Another problem is that the allergie-labeling is not like in the US.
Please, I am so grateful for any advice. Kind of really low and sad about a future without all those foods. How do you all manage?

    Question - was it prepared at home? or was this out? which taco sauce was it????? It may not have been the taco sauce it could have been a bunch of different things... tell me more and maybe I can help a little :-)

    Modified starch can be made from wheat but be gluten free. If you react to wheat as well as gluten I would say you need to avoid it.

    I just found out I can't eat locust bean gum after eating an ice lolly!!
