Today's day one in our experiment... and I'm already craving turkey bacon, though I don't typically eat bacon. Lol looking forward to making a yummy stir-fry for dinner.

Sometimes you dont realize how many food options there are out there until you go vegetarian. I've found all kinds of recipes and ideas that I never would have, before I went veggie.0

Your comment on your page early has inspired me. I am going to see how this week goes and if it is good, I am going to shoot for the entire month of May.And if that goes good, so on and so forth! Becoming a vegetarian is my New Year's Resolution, so I have to say thank you for encouraging me to take a step in the right direction!

HA! Thanks. I made the black bean enchilada casserole last night and it was so yummy. Had it again for breakfast! Matt even said it looked good! Today for lunch I think we are going to have morel mushrooms and veggie BLT's. Except I use spinach instead of lettuce. so VBST.0

I am in the process of converting to the Ovo-Lacto Vegetarian way of eating. Starting with yesterday - for the month of May I am trying to eat a Semi-Vegetarian diet. That means I am limiting all meats (animal flesh) to no more than 2 days a week. I think yesterday went well for my first try, but today and in the days to follow) I must find ways to get in enough protein without going over in Fat - even if it was the “good” kind of fat. ~ I am sure this will be an interesting and educational month for me. I am open to suggestions.0
