This is one of my favourites - great comfort food, especially on a cold day (of which there seem to be far too many atm here in blighty!)

Chicken & beans - serves 8 easily 479cals per serving

Tesco - Ready to Eat Chicken Cooked Skinless Breast Fillet, 4 Chicken Breast 480 0 6 102 800 0
Peppers - Sweet, red, raw, 2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) 85 20 1 3 7 14

Fry the bacon. Add onions, garlic (2 gloves) and brown off in the bacon fat. Add red peppers (cut into chunks) then add the chicken cut into 1 inch cubes. Brown chicken off, add tbl spoon tomato puree, season with paprika & black pepper, oregano, basil & parsley. Add beans & peas, pour passata over, stir well, cover & simmer for 20 mins.
cook rice while simmering
serve

    If your low carb I guess it would probably be a good idea to double the beans/peas and cut out the rice

    I find that I need the carbs of some kind to fill me up for the whole night - but it would go as well with bread or probably cous cous. I have tried it with pasta, but I don't like the mix of textures that gives....

    Great group idea. I don't know if I am doing this right...by just posting a new food idea. But I have been enjoying Fage plain nonfat Greek yogurt with sugar free Torani vanilla syrup. I don't usually eat sugar substitutes. But this one works to give the yogurt a less sour taste. And you only need a little bit of syrup. The Greek yogurt is high in protein, of course.
