Quinoa Recipes??

I am looking for new easy, but good and healthy quinoa recipes. If anyone has some to share, I'd much appreciate them. I have an excellent Quinoa Mac and cheese recipe that i will post to kick it off.
I use the base recipe and add as many veggies as I can find. I typically use onions, not leeks, and I'll add broccoli, green pepper, spinach, asparagus, chopped tomato, and even cayenne if I want some spice!
Serving Size: Can serve 6-8 Ingredients
2 tsp olive oil
1 med. leek white and pale green parts halved and sliced (1 cup)-OR chives are fine too
1/2 cup diced tomato, or red/green pepper
1 1/2 cups quinoa, rinsed and drained
good pinch of salt
a few grinds of seasoning salt
2 cloves garlic, minced
2 large eggs
1 cup soy milk, non-fat milk, or milk of choice
1 1/2 cups grated Cheddar cheese, more for sprinkling
Optional- Crushed Red Pepper, Panko Bread crumbs for topping
Toppings (optional)- salsa, hot sauce, sour cream, scallions (you get the picture)
Directions
Heat oil in med. saucepan over med. heat. Add leek and tomatoes (or bell peppers-or any veggies you want really); cover and cook 5 mins or until tender. Stir in quinoa and garlic, and cook, uncovered, 3-4 mins, or until grains start to turn opaque. (They will not fully be cooked yet.)
Add 3 cups water and season with salt and the Seasoning Salt (I like Lawry's or Everyday Seasoning). Cover and reduce heat to med-low and simmer 5-10 more, or until most liquid has been absorbed. Remove from heat and let stand 5 mins.
Preheat oven to 350 F. Coat 13x9 inch dish with cooking spray. Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt. Transfer to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, (or until browned around edges.)
Now you can toss with many toppings, some ideas: salsa, scallions, sour cream, and hot sauce! I serve with a side of steamed broccoli or a salad and a nice slice of good hearty bread.
NOTE: Many readers wanted to know how many Calories this AMAZING meal has. Divided into 6 servings: 339 Calories per serving.

Thank you for sharing! That sounds delicious! I will look into the stuffed peppers because that is a fav. here at my house. I grew Love Lies Bleeding in my garden last year, and come to find out, that it is actually Quinoa. It's tasty and beautiful0

I bought quinoa the other day for the express purpose of making the below recipe, although I haven't tried it yet:
A twist on Dirty Rice.
1 med onion – chopped
3 stalks of celery – chopped
1 red and 1 green bell pepper – chopped
1 tablespoon of olive oil
1 lb. ground turkey
3 teaspoons Creole Seasoning – I use Tony Chachere’s (you can use more or less depending on taste)
1 cup of Quinoa – I buy the kind that has been washed and rinsed
2 cups of water or broth
Sauté the veggies in the olive oil until tender, add the turkey and cook through. Add the Quinoa and stir for about 2 minutes, then add the water or broth. Bring to a boil then simmer, covered, for about 30 minutes until the liquid is absorbed.
Could use different meats or sausage.
Vegetarians can substitute other veggies like mushrooms or even beans. Could also add tofu.0 -
This sounds good. I've always found quinoa to be a bit tasteless but evidently I've been doing it wrong!0

I tried it last night, it was okay...quinoa is apparently not my favorite thing. Personally I'd rather just leave it out and have the veggies.0
