For the last three years I have been fairly content using this mushroom gravy recipe: http://vegetarian.about.com/od/saucesdipsspreads/r/mushroomgravy.htm.

But recently I went on a mini vacation to Chicago and was able to have dinner at the Chicago diner one night. I tried there "country fried steak" with gravy (I think that's what it was called) and the gravy was soooooo delicious!

Now that I know something so much better exists, I can't wait to make it myself. So if you have any favorite recipes or advice, please pass it on! Thanks.

    I know the Chicago diner has a cookbook for sale! My friend got it and she loves it. Found this from a quick google http://veggiediner.com/recipearchives.html

    I did find that page once before. I'll have to try it soon. It looks a little bit more complicated than I hoped but it's probably worth it. Thanks

    I was raised a vegetarian, and my mom always made a veggie version of gravy for Thanksgiving. It uses nutritional yeast and flour, and I think it originally came from The Farm cookbook. It is great over mashed potatoes and any vegetables. I am gluten intolerant and this past Thanksgiving we tried making it with chickpea flour instead, and it came out great!
