    Spinach, chicken and Black Bean Burrito

    We ate this for dinner tonight and it was awesome!

    This is from a book that Ms. Sharon let us borrow called "The Joy Fit Club"

    2 Chicken breast diced
    1/2 medium onion diced
    1/2 sweet pepper diced
    1 clove garlic minced
    1 8-oz can diced tomatos no-salt
    3/4 teaspoon chili powder
    3/4 teaspoon ground cumin
    1/4 teaspoon dried oregano
    8 cups baby spinach leaves
    1 1 oz can black beans
    4 12 inch whole wheat or spinach and herb tortillas
    2 teaspoons lime juice (we missed this step)

    Liberally coat a large saute pan with non-stick spary and preheat over medium heat. Cook diced chicken until done, then add the onion, pepper and garlic. Cook stirring until veggies are soft 5-7 minutes. Add tomato chili powder, cumin oregano, simmer over medium heat for 5 minutes. Add the spinach leaves and beans continue turning the mixture until spinach is completly wilted down.

    Now you are all set get your tortilla add the mix sprinkle a bit of lo-fat mexican blend cheese.

    Roll that bad-boy up and chow!

    This recipe is for a mean grean smoothie, which will leave you feeling ffresh revived and full...
    *1 apple peeled and chopped
    *2 cups spinach
    *1 avocado peeled,pitted and cubed
    *2 cups water(may need more to liquify)
    *1 Tbs honey
    * add all ingredients to blender, blend til all liquified.....ENJOY!!!!
    you taste mostly the avocado...if you prefer more honey for taste just add and sip..this is one of mine and Tim's favorites to give us some energy and feel refreshed!!!

    Sounds good Drea, we are going to have to try it out. I'll HULK SMASH it! We dont have any experince juicing, but I def. want to learn.

    Wow, James and Sasha shared this with my husband and me; It was really fantastic and VERY filling, almost a "one and done" using just small corn style tortillas!

    Pre-workout Meal 4:30AM

    "The Go-Getter"

    1/4 Cup Flax pumpkin seed granola
    4 TSPN Non-fat plain greek yogurt
    1 TSPN Honey

    Mix it with Spoon Knock it down and Go Getter.

    Post Workout Meal 6:30AM

    "not named yet"(still working on name hit me up with ideas

    3 Over easy eggs
    1/4 diced bell pepper
    1 cup spinach
    1/8 cup cheese
    2 6" wheat tortillas

    That is what I ate by all means cut the portion if you need to.
