My all time favorite recipe if you want a light and healthy dinner. I live alone so this will serve about 1-2 people.

1 cup Quinoa
2 cups Vegetable/Chicken broth (whichever you prefer)
1-2 onions sautéed in canola oil
1/2-1 cup parsley
1/3 pine nuts
1 fresh tomato



1) Get a pot and let the quinoa cook in the broth. Keep the quinoa in there until all of the broth is gone and the quinoa is now light and fluffy. (~10 minutes)

2) In the mean time, chop up onions and put them in a frying pan with canola oil. Sautee until light brown and soft.

3) Afterwards, toast the pine nuts in a frying pan (no oil needed) until a golden brown.

4) Add onions and pine nuts to the cooked quinoa.

5) Cut up tomatoes and parsley to add (you can add as much or as little as you'd like).

6) Add the parsley together with the tomatoes, season with pepper, salt & garlic powder.



I usually pair this with broccoli! Mmm. Makes me hungry just thinking about it.

    Not a recipe but a GREAT way to cook fish - I've done this with salmon and other "meaty" fish and it works perfectly every time.

    1) add small amount of oil to pan and heat on medium high
    2) dry fish completely with a paper towel - season as you like - I use pepper and fresh thyme on my salmon.
    3) add fish to hot oil, non skin side down, and let cook 2 minutes - no pocking or prodding - set timer and walk away
    4) turn fish over, cover tightly, remove from heat, and leave covered, off heat for 10 minutes. Don't peak - don't touch!
    5) After 10 minutes perfect, flaky fish!

    Wish I had this simple way too cook fish long ago. Fish turns out perfectly flaky and tasty. Fish is so healthy that I am now using this method twice per week!

    Haven't tried Quinoa yet, but have been wanting to. I'll definitely be picking some up at the grocery store. I can be hit and miss with fish sometimes, so a new approach helps there too!

    Here's one of my favorite salads in the summer.

    cubed watermelon
    thinly sliced red onion
    feta cheese crumbles

    ... all over a bed of arugula, then drizzle with balsamic vinegar. Addictive!

    I love quinoa - love love love it

    And I'm going to try the watermelon salad....sounds scrumptious.

    This isn't exactly a recipe but I find when I need a fast meal, and no real time to cook, it makes me 3-4 meals

    1 package of Trader Joes Chicken Serenada (It's a frozen meal with a Mexican taste)
    2-3 cups of rice
    fresh veggies (enough to round out the dish) I usually use zucchini, tomatoes onions and cilantro
    chop up your chicken, add sauce it was cooked in and add in your rice and veggies.

    Love the watermelon salad will have to try
    I just can not acquire a taste for quinoa, though the recipie sounds great...may have to give it another try.
