I do sort of the same procedure, except after the water comes to a boil, I cover and let sit for only 7 minutes -- then rinse them under cold water while peeling.

Until you are ready to give up chips completely, at least buy those that contain only "potatoes, oil, and sea salt" -- w/o all the other chemical ingredients. Hain Safflower Mayonnaise is the non-GMO brand sold at Whole Foods Market. It has a nice flavor and texture.

Nearly all soy is GMO, and has been implicated in "leaky gut," along with a host of other bad things. As for mayo, Whole Foods sells a good non-soy, non-GMO mayo. The oil it is made with escapes me at the moment, but it tastes nearly as good as the "real" thing even to a mayo addict like me.
