I made them with your pumpkin/apple pie spice suggestion today, as well as chopped pecans, and decreased applesauce to 1/2 cup. They were delicious!

I've served them as a dessert too, in addition to a meal and a snack. :smile: I added chopped dehydrated apples, golden raisins and pecans to my last batch. They were yummy.

For me personally, the protein powder I use makes a big difference in the taste.

I think this is a pretty forgiving recipe - if you look at the original that I linked to in recipe, I added 1/2 cup extra applesauce because I wanted to make sure mine were really moist, and they are. I say if you like them the way you made them, keep doing it that way! :smiley:

Kate7294, I think you can use any type of whey protein powder - those are the only ones I have experience baking with - I've never tried to bake with soy or other types of protein powders. Deli-turkey slice rolled around an avocado slice or a piece of low-fat cheese. As others have mentioned, boiled eggs and Greek yogurt are great. Another option is a protein smoothie.

Mygnsac, you can make it without the ground flax seed if you like. I love the flavor of flax seed, and I started out adding it to my regular oatmeal - just a tiny bit at the time - then increased the amount over time. Now I use it in everything!

I like to make an egg white omelet with smoked turkey (from the deli), sun-dried tomatoes, and fresh baby spinach. Sometimes, I don't even bother with the omelet - I just stir the ingredients together with the egg whites and scramble them up together.

For scrambled egg whites, I use fresh baby spinach, sun-dried tomatoes and chopped smoked turkey (from the deli). The pesto mentioned above sounds delicious too.
