Warm apples and cinnamon - cut up an apple sprinkle with cinnamon and microwave for about 1-2 minutes. Low cal but still a sweet warm treat

I usually make Spanish Rice (brown rice) and add corn, tomatoes, onions and even shredded carrot. Get creative and add anything that sounds good. Also spicy pickled veggies like carrots are easy to make and pair well with Mexican dishes too.

One of my fav's is to toss with a dressing mixture of lemon and a small amount of honey then add sliced green onion, yellow or white corn (I use frozen or fresh - not canned) green onions and top with feta cheese!
