Good luck with the change! You'll be amazed at how much healthier you feel when you go gluten-free (if you have intolerance or celiac's). 5'11" and my target is 160. I had eating disorders as a teenager and got below 130 which for me was absolutely skeletal. I think 160 would be a healthy weight for my build.

Are you eating any kind of fake sugar? I find that when I try to give up carbs, I fill the void with sugar-free crap when I have a craving. The fake sugars give me migraines. So the headaches are (indirectly) related to giving up carbs, but not withdrawal. At least that's what I've found in my own experience.
