Peel then cube eggplant into 1/2 inch cubes, chop 1/2 white onion, 1 tbsp dried or fresh parsley, 1 tbsp minced garlic from jar (less if fresh), 5-10 minced pickled jalapeno slices based on preference, 1 tsp.
