I've done it once and didn't feel it in my "bad" knee (ACL tear/meniscus tear/surgery both times). A good friend of mine has a litany of knee issues and she paddleboards regularly.

It is personal taste for sure. I like Optimum Nutrition, my favorite is Quest but Quest is quite pricy, Optimum Nutrition is significantly cheaper at places like Costco. You could try a place like GNC and pick up small/sample sizes and see what tastes best to you.
