  • Hard boiled eggs make a great stuffing for meatballs. I use 1/4 or 1/8 (depending on final size desired) piece of egg, green onion or chives & cheese with any favorite meatball mixture. With this in the center, the meatballs usually turn out to be shaped more like a football than round. Cook as usual & enjoy!
