If you don't already have a kitchen scale, get one so you know how many grams or ounces you are consuming of certain foods that require those kinds of measurements. Also, what foods are you not finding? If you can give a few examples, it will be easier to point you in the right direction.

No. You don't HAVE to count calories & log your food. It's a choice, you do it if you WANT to. I don't get angry about choosing to put in a little extra effort in exchange for big results.

Ugh! I know, right?! The only thing I can suggest is that when I limit the long cardio sessions and do HIIT training in its place I tend to see better results.
