I think it is very important to understand that you cannot gain weight and expect to see abs at the same time. You need to get to a suitable body weight before you should start cutting back for those abs. Eat in surplus for a few weeks and see how your body is progressing

This depends on the macro nutrient breakdown of your calories. There is a possibility that most of your calories are coming from carbs which is probabaly making you feel full all the time. You can try making protein pancakes. There are lots of recipies on the internet. You can increase/decrease carbs,fat yourself by adjusting the amounts of oats,peanut butter etc. Or if you are looking for something quick, try the MyProtein range of snacks.
