Avacado Smash ... mash avacado, feta, salt pepper and lemon juice ... then spread over some toast (a nice thick multigrain is good). Sometimes I add fresh cilantro or Italian parsley if available.

I start with a base of 2 mini cucumbers, a large pepper (any colour), green onion and a tomato all chopped up. A bit of salt, pepper and red wine vinegar.
