I stopped worrying about when and how close. (who invented breakfast anyway?) I might have a bar and coffee and call it breakfast but i eat a good sized lunch anywhere from 10 am to 2 and then dinner at 6ish to later and it's usually my main meal. I try not to throw in to many snacks and focus on larger meals.

it depends on age and how long you were overweight and most definitely genetics. I see all different results, sometimes it takes awhile for some of it to catch up. Certain spots on the body are also saggier or prone to have loose skin. There is no hard and fast rule to prevent it or fix it less than surgery.

I only log it on MFP saturday for my weigh in, but i'm ridiculous when it comes to weighing several times a day. it's like a bad habit but I don't really think about it affecting my progress.
