I only get one full day off a week to do all of my household chores, paperwork, personal errands, and grocery shopping so dedicating a large sum of time to meal prep is daunting. my breaks are in between appointments so I get 5 to 10 minutes to scarf down something - normally what happens is I don't eat at all for long periods of time and grab something (drivethru) that can be eaten in the car while running errands for work. Normally microwaved lunches end up in the microwave...and never coming out…

Thawing chicken in the fridge is great, if our tired brains remember to pull it from the freezer - if not its babysiting it under running water to thaw.
