To determine distance I just time a few laps to get a rough average and then make an estimation based on the total time I swam. It's not as accurate as a device but it's good if you don't have a device and can't bother keeping count in your head.

I swim frequently and I rinse off in the shower right away. For body, I use Lubriderm unscented. For my face, hands, and feet I use Vaseline.

A friend of mine has ADD and is on medication that also makes him lose his appetite. He sets an alarm for when he needs to eat. Nowadays there are all kinds of smart watches that pair with your mobile phone, so maybe wearing one of those in addition to setting the alarm will help.
