  • Roasted Carrots: whole carrots skinned and cut into wedges (baby carrots work, but aren't as pretty) 1.5 tbs oil ( i use coconut) 1.5 tsp honey 1 tbs red wine vinegar roast in 400 degree oven for about 25 mins. Bonus: crumbled feta on top is delicious
