I eat boneless skinless chicken breast a lot as well as eggs... lots of protein.... eggs have fat but not much in chicken. I also use protein powders but would rather get it from food.

Don't go on a diet. Change your lifestyle... meaning: how you relate to food. Log everything and eat a deficit. If you log correctly and eat to your deficit you will lose. Exercise helps but is not required.

Congratulations! That's a huge accomplishment! All the hard work paid off. I see my Dr. in January and hope to have a similar experience. My A1C was 10.3 in February... at the end of May it was 5.7... and I'm sure lower than that now. Gonna ask my Dr if I can go off metformin xr and losartan if my A1C and blood pressure…

I've been told the BG above 140 are damaging to blood vessels... so spikes under that I don't worry. If I go to 140+ then I feel I need to do something to reduce it.

I have the Fitbit Charge HR and am considering upgrading to the new Vivosmart HR.... waterproof and better workout tracking and smartphone functions... my Fitbit I've had for about 7 months and really enjoy it. FitBit and MFP have helped me lose ~ 50lbs since March.

I like Syntrax Sweet Chocolate Truffle. 1 scoop = 0 carbs, 0 fat, 23g protein, 100 cals. Dissolves very good in water or milk and has a great chocolate taste. If you close your eyes almost think it's a chocolate shake (ok, not really... but ok)

Finding carbs that are also high in fiber do help as they lower the glycemic index of the food as the vast majority of fiber is not metabolized.

I know you are doing LCHF but I wonder if you have carbs before working out if it would satisfy you muscles extra demand for energy and avoid having to have your liver dump the glucose into your blood stream (Somogyi effect happens to me at night often). I really like the Fitbit Charge HR... regardless of the type of activity you do it tracks your heart rate to calculate the calorie burn. Pretty comfortable on the wrist. Could be cheaper at $150. But there are much more expensive options. I really like you can challenge other with fitbits to daily or weekly challenges…
