I have a desk job too. I'm able to get up once every hour and go walk for few minutes - get water, restroom, etc..on my lunch break I eat lunch fairly quickly and spend the next 45 minutes walking. Once every morning and I enter it on the Happy Scale app so I can see trends. But I only log my weight into MFP on Sundays, which I consider my "official" weigh-in day.

Break it up in to smaller increments. For me it's 10 lb. increments. It's much easier than focusing on the big number. I remind myself that all this time will pass whether or not I am eating at a deficit, so why not do it and a year from now reap the rewards. It's better than being in the same place.

Don't think it matters. I eat breakfast because I've realized I feel better and less likely to snack later in the day. It's also my favorite meal and usually my biggest meal calorically.
