Cut them into 1/4 inch thick medallions and bake at 425 for 40 minutes turning half way (watch them closely so they don't burn) then make any meat you like using taco seasoning, add nacho toppings and you have delicious guilt free nachos.

I do 1/2 cup non fat Greek yogurt with 1/2 cup vanilla almond milk and 2 tbsp chia seeds. Leave it overnight and then in the morning add whatever fruit you like. So freaking yummy

3 eggs 3/4 cup low fat cottage cheese 1/4 cup flour 1/4 teaspoon salt 1/8 teaspoon baking soda Optional: 1/4 teaspoon cinnamon (I highly recommend this!)
