  • I forgot to post what I did last week. I found a quinoa and kale salad recipe and ate it several times. It's one of my new favorites.
  • I made stuffed shells and snuck in spinach and blended cauliflower into the filing then topped them with a red sauce. My family didn't even notice the extra veggies!

  • Any vegetables roasted in the oven. You can eat a bunch and don't have to worry about calories (unless you use a lot of oil) Asparagus, carrots, potatoes, broccoli, squash, zucchini, Yum! I love that they are easy to cook and I can eat them from my garden. Eating food I grow makes me so happy!
  • German Pancakes or Puff Pancakes 6 eggs 1 c milk 1 c Flour Blend in blender. Melt 1/3 cube butter in a 9x13 pan. Pour egg mixture over melted butter and bake at 400° for 18 min. Serve with jam or syrup.

  • So happy to hear I'm not alone with my Sugar Struggle :wink: Last time I went without sugar for longer than a couple of days I had a dream about eating sugar by the spoonful. No dreams yet but it's helping my calorie intake. It's easy to keep your calorie goal when you can't snack on anything sweet!
