Tuna over fresh locally grown greens, topped with the juice of half a lemon, a drizzle of olive oil and a pinch of course ground salt & cracked pepper. I love a glass of ice cold milk with mine. Very satisfying lunch.

I like to get fresh kale at my local Saturday market, wash, lay flat individual leaves on a cookie sheet & freeze. After frozen, I transfer them to a freezer bag.
