Has your training included longer walks multiple days in a row? What happens if you get into day 3 and just can't do it anymore? Is there transportation back to the start?

Try some of the steamfresh vegetable bags. Super easy to start with, and a lot of them have seasonings to make them more palatable.

The point people seem to be missing is that she is not actually in a plateau. She's losing a steady 2 lbs a week. Hubs seems to have unhealthy expectations for his wife's weight loss.

I would suggest just eating at a reasonable deficit and not worrying about carbs unless there is a medical issue. She should be aiming for 25g of fiber per day to avoid constipation issues. 7-8 lb loss in 4 weeks is great. She shouldn't expect to lose more than 2 lbs per week. I enjoy going to the gym in the evenings. My house is chaotic sometimes with two small kids and neverending things to get done. It's nice to get away for an hour.

Low calorie diets are generally frowned upon here. You don't need to go as low as 800-1000 calories per day. Just stick to the MFP number and you'll be fine.
