  • Last week I started making veggie wraps using romaine lettuce leaves instead of high calorie alternatives. So, for taco night, I served Boca meat, black beans, tomatoes, avocados, lime, cilantro and vegan green chile salsa. Everyone made their own "tacos" using lettuce leaves. It was a hit. I also used the same concept…
  • Use Tupperware to bring salad or beans. I like to sprinkle beans on top of kale and forgo the dressing. It's really delicious. Also try Amy's vegan soups. And don't forget peanut butter and jelly or honey! You may also like a simple veggie sandwich, or veggie burger. These are becoming more common and easier to come by.
  • Make your own hummus using garbanzo beans, or any other type of bean. Add tahini and lemon and spices to your liking. Use your food processor, adding a bit of water until the texture is right. Use lettuce leaves for fewer calories or pita bread. I like to add tomatoes and cucumbers or seedless olives.
