Correlation does not equal causality. I don't think you've got a dataset that proves very much more than weight loss is nonlinear and humans are impatient.

I eat my walking calories. I have found the Fitbit calories pretty accurate overall. I watched it carefully at first & ended up making myself shorter than I really am on my stats to get it right where it needed to be.

Your body will tell you if you go too far into deficit! I have trouble eating enough on my longest hiking days, like 14 or 15 miles & lots of climbing. I just can't pack or sit and eat enough on those days. I usually require a fourth meal the following day, either an extra breakfast or an extra lunch.
