  • I LOVE Thanksgiving! I spend weeks planning my menu and days cooking. This year I'll be doing turkey brined in Maker's Mark and maple syrup and wrapped in bacon while roasting, cranberry sauce from scratch with apples and maraschino cherries, cornbread dressing with Conecuh sausage (dressing is like stuffing, but cooked in…
  • I've had good luck with rice in the crockpot. Brown rice works much better than white rice. I do love my rice cooker though, so it's also not hard to cook up a batch and mix it in after everything is done.
  • What I mean by that is that if you can do VB, you can do C#. C# just has a lot of extra syntax.
  • Don't worry. C# is a perfectly superfluous language. I personally prefer VB, but have inherited a few C# applications.
  • Mujadara is a huge hit at my house. It's a Lebanese dish consisting or lentils, rice, and caramelized onions. Even my toddler loves it (okay, my toddler is weird and keeps requesting snails for dinner). I've made it with quinoa instead of rice before and it turned out pretty good.
  • I use chicken breasts as the base. Pound it thin and top with tomato sauce (not quite the same thing as pizza sauce), mushrooms, peppers, turkey pepperoni, and cheese. Bake at 350 for 30-45 minutes or until chicken is done and cheese is melty. It's really more a pizziaola than a pizza so you don't get the tactile sensation…
  • I made a cauliflower soup the other day that was good. I was trying to emulate chicken and corn chowder. I sauteed some onions and garlic in a tiny bit of olive oil (use a misto bottle) until they are just starting to brown. Then add a head of cauliflower that's been cut up into small pieces. Add a couple of chicken…
  • I do the chicken thing a lot too. I have found that flattening it a bit helps, but I also put raw veggies and turkey pepperoni on it before it goes in the oven.
  • In case anyone else is wondering about this, this is how I handled it. On the first night, I found a restaurant meal similar to what I ordered and used it. The next day at breakfast, I ordered a customized omelette, so I added individual ingredients and also added a tablespoon of butter. It was probably a few too many…
  • I can ask for no extra oil, but I don't always have faith that those instructions are followed. Especially in breakfast type places where all the food is cooked together on a flattop. I've worked in a professional kitchen, so I'm kind of aware what goes into a mise en place setup. And I know that usually means a big vat of…
  • We hardly ever eat out anymore, so this won't be a long-term issue. This is a weekend trip to the beach for my husband's birthday, so we'll probably have 5-7 meals out over the course of 3 days. Unfortunately, a lot of the places I've looked at don't have published calorie counts. I tend to stick to things like grilled…
