Another one I was shown by a chef involved cutting a boneless chicken breast in half long ways so you have two thinner pieces, then pounding them even thinner with either a mallet or the edge of a plate. Dredge in a little salt, pepper and flower. Pan sear in a little olive oil and serve immediately…
