My five minute to make lunch: 1 salmon or tuna pack 6 triscuits 28 grams of mixed nuts apple or banana (or both) couple of handfuls of a variety of raw veggies: baby carrots, grape tomatoes, mushrooms, mini cucumbers, sugar snap peas, mini peppers. If I had, I would prep celery and cucumber.

If you aren't using a food scale, yes, it probably will seem like a lot. If you are using a food scale, it probably won't seem like much. It was a sad, sad day when I realized what 1 serving of tortilla chips actually was.

I personally think 1,200 is far too restrictive, setting people up for binges and failure. I recommend you track everything you are eating now using a food scale for 3 weeks. Yes I wasn't about to bring a food scale to my in laws house. But when you log using a food scale, you get a pretty good idea of how much you are eating. I have also brought fudge and cookies from parties home just to weigh them!
