Any food you log on Fitbit doesn’t filter back to MFP but if you log everything on MFP and it’s linked to Fitbit it will update the Fitbit app. Your step count will make an adjustment under exercise on MFP from Fitbit (if enough steps done)

I'm in a similar situation to you. Lots of weight to lose its never going to be easy but I do know from friends that have lost weight keeping track of what they eat/drink has helped them no end. They too have had 'blow' outs when things have cropped up. They draw a line under it and start again.
