Agree with both above. Another good one is colour me vegan by Colleen Patrick Goudreau - It is organized by food colour. Kind of fun! Kind Diet was my first vegan cook book and I go back to it a lot.

I have a lot of smoothies in the morning. Mostly green (Spinach, Kale, or Chard) with some fruit and then to up the protein you can add oats, tofu, hemp, chia etc. to it.
