Whole30 Breakfast "casserole".... 2 sweet potatoes diced, your own combo of 1/2lb sausage/onions&peppers, about 8 eggs whipped up with salt/pepper/garlic & top layer of spinach. Bake @ 375 for 30mins. Makes about 6 servings and is a delicious and filling meal w/avocado! (P.S dont overfill the pan as i did with 10 eggs...)
