I use the same basic recipe...1/2 cup steel cut oats and 1/2 cup milk (whatever kind you like). Then I add different things for different flavors......(1) 1/2 chopped apple, 1/4 tsp cinnamon, 2 tsp brown sugar.........(2)1/2 chopped peach, 1/4 tsp cinnamon, 2 tsp brown sugar.........(3) 1/4 cup fresh blueberries or…

A really quick, easy stir fry recipe is to use chunks of chicken, a bag of broccoli slaw, an onion and whatever sauce you like. You can also add red or green peppers. The broccoli slaw makes it so easy...and adds a great crunchy texture.

Make up a box of sugar-free jello, but only use half the water it calls for. Substitute coconut milk for the other half...and then freeze in popsicle molds. Soooo tasty! Lots of possibilities...Coconut Lime, Coconut Strawberry, Coconut Oarnge.....

For quick lunches, make a batch of chicken salad...use your favorite low carb version...and put one scoop into 5 different containers. Add several celery sticks and one boiled egg to each container. A quick lunch that needs no reheating.

For breakfast, I saute one large bag of frozen California blend veggies in butter until it is warmed through. Then, throw in a handful of fresh spinach and saute one minute longer. Then, add 10 beaten eggs and whatever seasoning you want (Italian, Cajun, garlic powder, whatever) and scramble all together until the eggs are…

@fitoverfortymom ....So happy your family enjoyed my "lasagna" recipe! I will have to try it with chicken as well! I bet it was just as tasty! Your comment about your Italian hubby made me laugh! My hubby is Italian too....so I can definitely relate! Thanks for giving my recipe a try! :)

For dinners, I usually make two different meals, and we eat each one for three days...but not in a row. I cook one meal on Monday night, and we eat it, then store the remainder in sectioned plates with lids for Wed and Fri. On Tuesday, I cook a different meal, which we eat and then store the remainder for Thur and Sat.…

I do my meal planning in about an hour each week....I plan what to have for breakfast, lunch and dinner....although lunch is usually simple stuff like soup (make one big pot each week and keep in fridge)...or tuna salad with celery sticks, etc. For breakfast, and dinner, I only cook twice a week. For breakfast, our…

Make a big batch of your favorite tuna salad or chicken salad. Portion it into 5 containers. To each container, add celery sticks, carrot sticks, olives, and a couple of cubes of cheese. Store in fridge. Eat as is, or add crackers, or a wrap for variety.

For a dessert, there was always the one lime jello recipe with cottage cheese, pineapple and pecans....and sometimes maraschino cherries. Sounds weird, but it was actually pretty amazing. Search Pinterest for "vintage lime jello pineapple" recipe.....

@amusedmonkey ....You can actually get 6 pretty hearty servings from this dish when you use a 9x9 dish. Usually, we only get 4 servings from this size as well, but this recipe is really hearty and filling, so you might try a smaller portion and see if it works for you.

@crazyravr ....If I ordered lasagna at a restaurant and my Cauliflower Lasagna came out instead, I would be thrilled. It has a delicious flavor, is not as heavy as regular lasagna and I am not personally a huge fan of pasta. My last name is Pappagallo, so you can imagine the amount of Italian food I have eaten in my…

Here is a simple meal prep idea that I use for breakfast. Thaw a large bag of frozen California Blend veggies (Broccoli/Cauliflower/Carrots) and let drain slightly. Saute these veggies in a bit of butter in a large skillet. When they are hot , add a handful of fresh greens (Kale/Spinach/whatever you like). Continue to…

I have been using Leslie Sansone's walking videos and they are great. I am also buying a set of resistance bands because they don't take up a lot of room like a weight bench, etc...and can be used in a lot of different ways to work different parts of the body...plus they are low impact which is what I need at this point.…

I always meal prep my low carb breakfast to make things easier in the mornings. I make 5 days worth at one time. I scramble together 10 eggs, 1 large bag of California Blend frozen veggies (thawed), and whatever spices I feel like using that week...Italian seasoning, Jerk seasoning, Greek Seasoning, etc. I also add in a…

Sad to see so much keto/low carb bashing here. Obviously, different things work for different people. If low carb works for some people, who are we to tell them not to do it? Sometimes, a person has to choose a plan that they feel like they can stick with and follow consistently. Sometimes, the results from one eating plan…
