I consider dairy the perfect food. It often has nice equal, or near equal, amounts of protein and carbs and the fat can be very satiating. You're going to have to find that sweet spot by slowly increasing your carbs until the rash begins to go away. Once you get it to go away that's how many carbs you'll need to eat to keep it away while being low carb.

I've been working with someone while working on losing weight. It's been worth it and I wouldn't be able to lose without the added help. I say go for it. It's likely to help A LOT.

You might check Craig's list or local farms for free range eggs (even if they aren't organic). When ours weren't laying last winter I found them free range for $3 a dozen. I would buy 8-10 dozen at a time so they would save them for me. You'll get better eggs for cheaper if you do that. We use to sell ours for $3 a dozen.

I have trouble hitting my protein target almost daily. I make high protein smoothies/shakes using strawberries, a banana, egg white protein, pea protein, and coconut milk. I can manage to get 50 grams of protein in one drink that way for not too many calories. Canned chicken, canned tuna, lots of eggs (the whole egg), etc.

Three days a week at the gym (alternate lifting upper body/lower body/both) with 60 minutes of treadmill afterwards. Walk 2 days a week outdoors (those are my "rest" days). No weekends - ever. If I lift anything less then 3 the results are very slow.
