I like to weigh daily, I feel like it helps me keep accountable to myself. I do so with the full understanding that weight loss is not linear, and sometimes my weight will go up and sometimes down and sometimes will even stay the same, but as long as the overall trend is going down, then I am okay with it.

Where are you getting this information from? If you are eating real whole foods and utilizing fats in your cooking like EVOO, Coconut Oil, Butter, Tallow, Lard, etc you don't need to be drinking/eating additional fats. Take a look at my diary. Why do you want to keep your carbs AND your fat low? Fat is satiating. Limit your carbs, eat your protein limit, and then consume fat to help keep you full. Can you lose weight doing that? Ditto. I love this scale. I've had it for 3 years I think. It's a little bit pricey, but I don't have any issues with it. I like that you can sync multiple users to their FitBit accounts, so my H and our two daughters can all use it. The boys can use it too, but they don't have FitBits.

@Mjkozki would you mind opening your diary? It will be easier to make suggestions if we can see what you are eating on a daily basis. My diary is open as well if you'd care to peruse it. It's possible you are becoming too dependent on things like Fat Bombs and Shakes when you should be focusing on whole foods.

Change you diary to show fiber and just subtract fiber from total to get your net carbs. Unfortunately there’s no way to get MFP to do this calculation for you.

Are you tracking calories? Some people, like myself, still need to track calories even when doing Keto. Is it possible you are eating more than you think? Also, don’t worry about exercise right now. Move when you can, but weight loss happens in the kitchen, not the gym.

If you want to be more specific, it's actually .75-1.3 g of carbs per Kg of lean body mass. Many people WAY overeat protein using the wrong formula. Using a number of like 1g per 1lb of lean body mass is more for those trying to gain muscle.

I would probably not dive right in to a dairy-laced splurge meal if it were me personally, it may be too much for your system to handle after having no dairy for nearly 3 months. Your post isn't clear, are you at goal weight or are you still losing weight? If the latter, you can't spot reduce. The fat is going to come off from where ever it wants to and doesn't matter what exercises you are doing. It sounds like maybe you are not eating enough for the amount of activity you are doing. Personally, I would try to find your new maintenance amount with the starting of this new job, eat at maintenance for 2 or so weeks, and then start to try to lower your calories again to start losing weight.

I don’t track fiber at all. Fiber is insoluable and one of its main functions is to bulk up your stool which is important when you have a high carb diet, not so much when you are low carb.

I occasionally incorporate 100% cacao in my Keto diet. The chocolate itself isn't terribly high carb, it's the sugar that generally puts most "chocolate candy" into the no-for-Keto category.
