Spiralize or shred cucumber over a serving platter. Smoked salmon sporadically thrown over the cucumber. Creme fraiche / Greek yoghurt mixed with lemon juice - liberally dotted over the cucumber and salmon. Finish off with seasoning.

Courgette & aubergine lasagna with cheese & egg layer. I ate about 1/6 and my hubby 1/3. This is a veggie meal without pasta. Yummy!
