I tried hummus today heated in the microwave for about a minute with mozzarella cheese on top as a substitute for refried beans. Wow, was it ever yummy! I will definitely be doing that more often!

I love one of the flavor packets that is lemon pepper with a little mozzarella cheese melted on top in the microwave or toaster. Very yummy when warm with gooey cheese, and adds some extra protein!
