  • Microwaved sweet potatoes can make a good breakfast. You can top them with chopped walnuts and a little maple syrup or honey if you like. There’s also oatmeal - endless opportunities there. Or even rice or quinoa with fruit or granola added in.
  • I think I was making similar suggestions - It’s just my opinion that it’s more sustainable to replace current practices with healthier options over time rather than in one fell swoop.

  • I like chickpea salad quite a bit (mashed chickpeas, vegan mayo, celery, garlic salt). I also will bake up some squash or sweet potatoes during the weekends and then eat that during the week.
