I do use scales and measuring cups! I learned that lesson when I first started eating this way. As for the kind of vegetables I eat, admittedly I do prefer mixed vegetables. I do focus on broccoli and cauliflower every now and again but they are not enjoyable for me. Which also means the carb count starts to add up a little

Dieting may not be the right choice, but definitely choosing the right foods. Choosing a lower carb lifestyle might be good so that she doesn't have to give up the things she likes, but isnt getting an overabundance of carbs she doesn't need. Yeah one of the big reasons I switched was because of insulin resistance. Eating well and low calorie doesn't do anything for my weight with mass amounts of carbs involved. I dont actually count calories. The high fat leaves me satiated. So I just eat a few smaller meals a day. I did count a few days though, and I was well within my safe zone.

I'm late to the party, but this is such a cool idea!! SW: 156.5 GW: 150 Goals: 80oz water/tea Carbs (I don't count them because of how I structure my meals. So mainly, this is avoiding soda or having maybe 1 every other day or so). Exercising 5x a week (not quite daily, but hey!)

I use stevia and erythritol!! The latter tastes and looks like sugar. It has listed carbs, but you can ignore them. It's a sugar alcohol that your body doesn't have the enzymes to digest. (So no spikes!) I use it when I have a sweet tooth and I can make baked goods, but not feel guilty.
