You would connect MFP to the polar flow app (web version or phone app). It can either be after a sync from the computer or the sync to an Apple device. Once you have everything connected with polar flow the steps and workout information will start to display in MFP.

I would go with the HR. It is always good to see where your heart rate is during exercise. It also helps get a more accurate calculation of calories burned. I have a polar HR monitor and I wear it when I exercise so I know where I'm at in each fitness zone. I feel that the HR piece is worth the extra money.

Yes the Apple Watch can sync with MFP. I have mine connected and it works without any issues.

I have used both a fitbit one and the fitbit charge as well as the Polar M400. I really like the Polar M400, I think it is more accurate at step tracking and when paired with the H7 heart rate chest strap, it seems to be more accurate at exercise tracking. I have a Polar M400 and I have activated the Polar Flow app which syncs the data from the Polar devices to MFP. Hope this helps.
