A month ago, I felt the same as you. My trainer would get on my butt about even a TINY new potato. I actually cut out dairy, sugar, taters, pasta, etc and I'm doing just fine! PROTEIN is your friend!!! LOTS of protein and fresh veggies/fruits will keep you full for hours. I eat about 1200 cals a day (not that I'm counting really because I'm on Paleo) and I'm never starving. No bread, no dairy, no pasta, no sugar...and it WORKS.

I am sans gallbladder. I've been working up to paleo this past month. I've had NO issues whatsoever. The fats you should be eating more of in Paleo are the GOOD fats. Not fats used in fried foods. In fact, overall, my "functions" have been getting better overall since becoming a cave woman.
