Pretty much just eat more. You could always add in some sort of supplement weight gainer if you really wanted to but usually its just easier to have another meal.

Stretching and Foam rolling work for me most of the time. If I am super sore a few days after a hard workout I'll do a very light workout using the muscle group that is sore to get a bunch of blood flow to the muscles and it helps me usually right away or the next day.

If you aren't killing that muscle in your workout every time then you should be fine. I do the same as Michael with pullups and pushups every day.

I try to keep things around through the day that remind me of the gym. Like my phone lock screen is a quote or a picture of weights. You can also check google/pinterest for body weight exercises to do at home. When I don't have time to go to the gym I'll do a workout in my living room. I have resistance bands and a pullup bar but you don't need those to have a good workout.

You could mix the vegetables into a smoothie with fruit and juice/milk/water. The flavor of spinach completely goes away when mixed with certain things. If you google spinach smoothie you get many results. This could get some vegetables into your diet.
