To gain weight? Very little. The 1600 cals per day may or may not help you gain weight, but the stationary bike riding won't do much.

Getting strong is about the lifting... getting lean is about your diet. IMO, reps should be in the 5-15 range, with # of set and amount of weight varying accordingly, regardless of "lean" vs "strong". Slow your rate of progression if/when needed.

Nice. I ended up having to clean out all the boogers left behind from the old/dry sealant before I could get a good, strong reseal. That was a bit of a chore. Maybe not an issue on road tires, though?

I've been in and am still in a similar situation. 2 things about your scenario stand out to me... First -- You can't be injured. If running results in injuries, you need to stop. That is certainly an option, especially on the mountain bike side. Given my concerns about geometry/fit in a road bike, I'm hesitant to just wing it. I'm not sure how rational/reasonable that hesitation is, though.
