You can make lentil soup, potatoes for baked potatoes and a side salad, I don't know how much you have to work with but I'm a single mom with two children, I am also gluten-free. Yep! Had my ovaries removed a year ago..I'm on HRT, but I'll tell you the few pounds I have gained does not seem to want to come off the matter how hard I try.

Yesterday's salad. I had fun making the carrot ribbons. It's baby organic greens, grilled chicken, dried cranberries, walnuts, feta cheese, apple and made a balsamic vinaigrette to go on the salad :)

You can use a bit of olive oil or use less mayo. The all of oil is not that bad as long as it's good olive oil. Are usually add a little bit of lemon to mine whether it's mayonnaise or all of oil I switch back-and-forth between the two.

Congratulations! I quit almost a year ago. Started at 13 and just turned 40. I also put on some extra weight, I'm working on losing about 10-15 from my gain.
