Mascarpone cheese! I'd never tasted it before and see it on cooking shows all the time, so I decided to buy a container. When I got home and saw the fat and calories I like to have died. I never ate it--couldn't have enjoyed after that, lol. No thanks, I'll just eat butter!

I like to add pumpkin puree to chili...stretches it some and makes it sweet and kinda earthy.

Stove top Italian tuna casserole - add tuna to canned tomatoes, Italian seasoning, and garlic. Add cooked noodles or macaroni and heat through. Top with a little parmesan and it's done!

Another sweet treat I make a lot is to mix peanut flour with some splenda, a dash of salt and water until creamy. Drizzle sugar free chocolate syrup on top. I love to mash a banana and cook it in the microwave. It becomes more sweet and gooey. Top it with a tablespoon or two of crushed graham crackers and a dollop of fat free whipped topping and viola - you have warm banana pudding. It is incredibly satisfying and indulgent tasting for around 150 caloies!
